The Basque Country, located on both sides of the Western Pyrenees and bathed by the Bay of Biscay, with a territory of 20,664 km / square and with a population of barely 3,000,000 people is the territory where Basque culture has been developing for thousands of years. It consists of seven provinces, four of them located in the Spanish territory and three in the French territory. Its language is Euskera, it is believed to be the oldest language in Europe, a pre-Indo-European language.
The Basque country is an environment surrounded by mountains, with extensions of vineyards to the south and the northern coasts bathed by the deep and cold Cantabrian sea, giving our fish a tasty flavour, our coastal wines such as txakoli a balanced acidity, our Rioja Alavesa wines receive the necessary sun and our mountain and orchard products are blessed by a climate that respects the four seasons of the year.
All this generates the basis of our gastronomy, without secrets, simply high-quality products, made by families in ports, wineries and farmhouses from a sustainability base and respect for the environment.
Our knowledge of Basque products has only one reason, human relations. Those established with the producers, their families, the proximity and their problems and solutions found generation after generation.
This knowledge of the producers is what has made it possible for the great Basque chefs to be today a world leader and a reference. This knowledge of the product, from its simplest to its most advanced preparation, is what Basquetronomy offers.
